Easy Pumpkin & Dark Chocolate Chip Mug Cake


We're getting in the mood for the holiday season 🎃 here in Hong Kong, but it's our first year living without an oven! Luckily, I have a few mug cake recipes I've been making throughout the years which are done in the microwave!


These pumpkin & dark chocolate chip mug cakes are a great option to go to if you don't have an oven at home or just want a no-fuss super quick comforting desert. I've even designed it all you need is a spoon for measuring out ingredients!

2 microwave safe mugs

1 tsp for measuring

1 tbsp for measuring

Ingredients:

  • 1 egg

  • 2 tbsp pumpkin puree

  • 3 tbsp milk

  • 5 tsp brown sugar

  • 4 1/2 tbsp of plain white flour

  • 1 tbsp melted butter

  • 25g of dark chocolate chips (or chopped dark chocolate)

  • 1 tsp baking powder

  • dash of vanilla extract

  • 1/2 tsp of ground cinnamon

  • tiny pinch of salt

Instructions:

  1. In your mixing bowl, mix flour, baking powder, salt and cinnamon

  2. In you bowl, crack in the egg and whisk it up with the sugar and pumpkin puree until nice and dissolved. * If you don't have access to pumpkin puree you're totally fine to roast some pumpkin in the oven until cooked and use it here instead. (30-45 g) Do not boil your pumpkin if you plan to use it for baking as it absorbs water when boiling which will then effect the outcome of your baked goods! You can also leave out the pumpkin completely and have a lovely vanilla flavoured mug cake.


  1. Then, add your vanilla and milk and mix everything together well.

  2. Once mixed, add flour, baking powder, salt and cinnamon, mix

  3. Add melted butter last and mix until the batter is smooth and no more lumps are seen. (1 just used a fork or hand whisk!)


  1. Finally add the chocolate chips or chopped dark chocolate and mix.


Cooking:

  1. Pour or spoon your batter into your mugs, the batter should be rather thick but still pourable, topping the mug up about half way.

  2. Put 1 at a time into the microwave and cook on high for at least 2,5 minutes. Since all microwaves are different and mugs will vary in size, the cooking time should range from 2.5 minutes - 4 minutes. After 2.5 minutes, check your cake. When the cake is cooked it will come off from the sides a bit, will be slightly firm to the touch and have a few small air holes in the center.

  3. Take care when removing the mug from the microwave as it can be hot & enjoy your pumpkin and dark chocolate chip mug cake!
